  4. Rest : Turn off the heat and leave the chestnuts in the syrup for 24 hours so that they soak up the sugar well.
  5. Drying : The next day, carefully remove the chestnuts from the syrup and place them on a rack to dry in the open air for at least 2 days. Turn them regularly for even drying.
  6. Conservation : Once dry, your candied chestnuts can be stored in an airtight container.
