Easy Guinea Fowl Recipe with Coconut Milk

Ingredients :

– 1 guinea fowl
– 200 g button mushrooms
– 50 g of butter
– 1 lemon
– 5 tablespoons of coconut milk
– 1 tablespoon of potato starch
– 25 cl fresh cream
– 2 pinches of nutmeg
– Salt and pepper

Preparation

1. Cut the guinea fowl into pieces and remove the skin.
2. Peel and chop the mushrooms.
3. Melt the butter in an ovenproof casserole dish and brown the pieces of guinea fowl.
4. Salt and pepper.
5. Squeeze the lemon and put the juice on the meat.
6. Cook for 10 minutes over medium heat.
7. Add the coconut milk and grated nutmeg.
8. Put the lid on the casserole dish and cook in a hot oven for 1 hour, thermostat 180°.
9. Pour the starch diluted in the crème fraîche into the casserole dish 15 minutes before the end of cooking.
10. Eat with hot Creole rice.
